The students at the University of Gastronomic Sciences are taking a bike trip down the Po river valley in northern Italy to learn more about the connections between the river, local culture and food production. I joined them for a few days while the tour was in the Parma area. Their trip runs from the source of the Po to the delta and will take 24 days. I only participated for three days and I was exhausted. Hats off to these young gastronomes and as one of the students’ t-shirts said: “Prisoners of taste!”
